(I definitely want her! Can't seem to find any jelly filled donuts here and it's driving me nuts. Even Mister Donut and Krispy Kreme only have custard filled ones, I'm getting desperate)

Okay so essentially, you make the same dough you'd make for cinnamon rolls, only use sour cream instead of butter in the dough (so it's a little softer).
When you roll it out, instead of spreading it with the cinnamon mix and rolling it up, you take 2 different sized glasses with perfectly straight sides. You use the larger one to cut out circles, spoon a *TINY* amount of jam or jelly into the middle of half of them. Cover them with the other half, use the slightly SMALLER glass to press them together and trim off the edges.
Let rise while you boil oil in a LARGE pan (there will be spatter, you want it contained) -timing is about perfect for this, I never bother to set a timer.

Then dump them in boiling oil, a few at a time, until they float up... flip them over so both sides get gold brown, lift them out with a slotted spoon onto a stack of paper towels (which will get soaked with the oil but whatever), and then as soon as you can handle them without burning your fingers you roll them in powdered sugar and eat them and beware because the jam will still be very hot inside but it's usually worth the burned tongue.

Voila! Jelly-filled donuts.

(You can do the cut-off dough bits separate, at the end. Twist them together first, then do them, and roll them in cinnamon-sugar instead of powdered-sugar and you essentially have weird-looking cinnamon twist donuts, too)




Anyhow.

Oooh I would have thought the jam goes inside after. Thanks! I'll try that when it's not summer anymore and I can't bear standing near the heat for a longer amount of time XD

If you do it before you cook them, the jam kind of explodes inside the donut and flavors the whole inside of the donut itself, and imparts a sort of smoothness to the texture of the doughnut's middle.
If you do it after, with a syringe, you have to use a lot more jam and you get kind of a sandwich effect -it's not so much a "jelly donut" as a donut, and also jelly. No flavor impact on each other at all, if that makes sense? You may as well take a plain donut and spread jam on it.

Yeah, it can get hot. If you do it outside so it doesn't heat up the house then it's like having your own mini street-fair, but not everyone's set up with a camping stove or wants to go outside in the heat, so yeah.
