I don't really know what you would substitute for rice either. Just leave it out or make up other meal, I guess XD

Oh, I guess. But then isn't that just another grain, so you could just eat rice? If you're avoiding it for the diet I mean. If it's just because you don't have any rice in the cupboard, quinoa sounds good XD Or couscous too.

Quinoa is so-so for me. I don't really like the texture but it is very versatile as an ingredient.
