The "O" is just a suffix that indicates politeness and respect.
But I think the reason why some words are always used with an o (like ocha) regardless whether you are talking polite or just with friends, is just that it got so common with some words. I think that, for Japanese, it's almost as if tee mean "ocha" and not "cha" and the original meaning of the "o" got lost (even though they are all aware of what it stands for).
Not sure whether it's gets understandable what I mean....
