When they're ready to harvest they look like happy dancing pumpkins.
That stage will come whenever the countdown underneath them runs down if yours currently look like those in the Pumpkin Culture picture.

I've harvest the first 3 seed, my results:
W = Water
F = Fertilize
Combination 1
Day 1 ---> W+F
Day 2 ---> W+F
Day 3 ---> W
Result: Halloween '11 Pumpkin Skin (Fire Orange)
Combination 2
Day 1 ---> W+F
Day 2 ---> W+F
Day 3 ---> F
Result: Halloween '11 Pumpkin Jack (Fire Orange)
Combination 3
Day 1 ---> W+F
Day 2 ---> W+F
Day 3 ---> W+F
Result: Halloween '11 Pumpkin Background (Fire Orange)

This is really cool! I got my first few items today. I ended up with mostly the background but eh, I'm having fun and there is still time for me to get the rest. I know what to do now. <3

Only if you plant them all the same way (I know at least one other person who did that). The Event thread in the Chat forum should be able to clear things up for you.
