Well, even under black and white, there are many many categories and flavors. The colors are just a name for when the tea was picked~ It goes by age; White, Green, Oolong, and Black~ Teas, as they age, ferment and develop their flavors, green and white are both unfermented, but white tea is younger than green, and oolong and black are both fermented, though black tea is fermented the longest~
