I still wait for an answer about the dishes. But for exemple, the "bouillabaisse" is pretty well-known (it is more a speciality from Marseille. But you can find it everywhere on the south coast)
Concerning the sweet things, you've got nougat, the calissons and the tropézienne. (I don't think there is an english translation for those word (?))

It is not that french doesn't like english that much. It is just that french are bad at speaking english, haha xD
Oh, you know Catalan ! I'm impressed by all your knowledge ! Most of the South France were catalan. My father used to speak this dialect :)
