There are ethnic looking knuffel. >>
There are several that have darker skin colors. ;3
Light and Darkness Gen 3
Earth and Fire Gen 4
A couple from the 1st Gen...
The current Earth Gen 7 (mushroom girl)
And she is a mushroom. ^^
In her preview, you can see her hat, which has an edging that looks just like a mushroom cap.
You know, with the little ridge thingies and whatnot...

But I do understand what you are saying with the skin colors.
Really, I'm just throwing some simple ideas out there. Like Firn used to do some oriental dressed knuffels. I thought those were so cute <3
