廣式月餅

材料：　
餅皮：
低筋麵粉（cake flour）100g，轉化糖漿 75~85g，花生油30g，鹼水半小匙（附圖C），鹽少許。
低筋麵粉50g，花生油10g。
鹹蛋黃：視製作數量決定。
餡料視餅模大小決定。這裡用的份量是：小月餅->皮12g+餡32g+1/4個鹹蛋黃；大月餅->皮27g+餡100g+1個鹹蛋黃。
蛋黃液：只取蛋黃，攪散之後直接刷，如果太稠，可以加幾滴油進去稀釋。

做法：　
1. 製作餅皮：
混合轉化糖漿、花生油30g、鹼水與鹽，攪拌均勻之後，倒入低筋麵粉100g拌勻成團狀，覆蓋保鮮膜，靜置1小時。再加入低筋麵粉50g，並加入花生油10g，揉勻即可。
2. 烤箱預熱至160 C/ 325 F。取一份餡料，包入鹹蛋黃，收口搓圓之後，取餅皮麵糰一份，搓圓壓扁成圓片狀，放入餡料，一邊推薄餅皮、一邊用虎口收攏開口。然後在表面薄薄地撲上一層麵粉，放入壓模中壓緊，扣出。排在烤盤上，先放入烤箱烤焙6分鐘，取出，刷上蛋黃液，放回烤箱繼續烘烤約15分鐘直到上色。
3. 取出之後，靜置待涼，放入密閉袋或盒子中，放置1~2天回油之後就可以食用。
