The Yuri on Ice theme, History Maker is always a fav. One Piece also has a lot of really good themes as well. I especially like the first season one, Brand New World, and Kokoro no Chizu.
Since I've been watching FMA: brotherhood lately, I'm also rather enamored with the last season's intro as well, though that's never been something I sought out just to listen to before.

Ok this is going to make me sound like a huge nerd but I've always ADORED the Digimon Frontier themesong. Didn't even care for the show too much, but the theme song always made it sound like such an epic adventure...
