I would say couscous for a replacement for rice, but even that is considered a grain I believe. You could maybe try brown rice or wild rice..these are supposed to be healthier than white from what i've gathered.

My mom tries to stay away from a lot of starchy foods like pasta because she has diabetes so we;ve tried a few different things as substitutes to pasta.

If you really had to you could cut out grains all together :/

I've tried Quinoa, don't like it at all.

I do like brown rice, and I prefer jasmine or basmati rice. Or the rice sushi uses.

Quinoa is smaller and more grainy than rice and ebly, I always feel like it gets stuck between my teeth more and its less satisfying to chew? That is probably entirely personal though ;P
